Chipotle Shrimp Taco with Avocado Salsa Verde

Recipe courtesy Food Network Kitchens

Ingredients
Avocado Salsa:
1 small onion, quartered
1 jalapeno, quartered, seeds optional
1 garlic clove, smashed
4 medium tomatillos, (about 8 ounces) husked, rinsed, and coarsely chopped
1/2 Hass avocado, peeled, seeded, and cut into chunks
1 1/4 teaspoons kosher salt
1/4 cup loosely packed fresh cilantro leaves, coarsely chopped

Shrimp:
1 tablespoon olive oil
1 teaspoon chipotle or blended chili powder
1 teaspoon kosher salt
1 pound medium shrimp (about 20), peeled and deveined
8 corn tortillas
8 sprigs cilantro for garnish
2 limes, cut into wedges

Directions
Put the onion, jalapeno, and garlic in a food processor and finely chop. Add the tomatillos, avocado, and salt and pulse until chopped but still chunky. Transfer to a bowl and stir in the cilantro.

Heat a stovetop or outdoor grill to medium-high. Mix the olive oil, chipotle or chili powder, and salt in a large bowl. Add the shrimp and toss to coat. Grill the shrimp until translucent, about 1 1/2 to 2 minutes on each side.

Grill tortillas, until slightly charred and pliable, about 20 seconds per side. (Alternatively, wrap in a damp paper towel and heat in a microwave.) Spoon sauce on the tortilla, then top with about 2 or 3 shrimp and a sprig of cilantro. Serve 2 tacos per person, with a lime wedge on the side.

Midnight Heat sensual body lotion by Beyonce

...is pretty cool. The scent is as fun as the creamy texture to touch. Heat is Beyonce's 1st fragrance out of several now and it's the one I enjoyed the most this month.  Soft warm thoughts, as your skin is suddenly a cool girlie girl vibe. Non-greasy with adequate properties for my feet & hands to enjoy. If you try it, let us know about it.

A Beautiful Mind welcomes

ANTONIA S. DUNBAR (NY)

To show a diverse reach of readers that everything is possible all over the globe,
what states or countries have you lived in? What state do you live in now?
I've lived in Michigan, Illinois and New York where I live now, in the city of that great state called the Big Apple.

1.  If there's a song that reflects your vibe, what would that song be?  Do you meditate, pray or/and take time to mentally relax?  If so, what part of the day? For how long?

A song I definitely love is Snatam Kaur's "Ra Ma Da Sa" for relaxation and healing - both of my sisters actually chose that song for staying peaceful during childbirth - and I also love "Ray Man Shabad" sung by the same singer. She truly has the gift of "naam," or the holy sound current, and when these vibrations are heard, one is transformed on a cellular level to the greater states of being available to us if we just tune into this higher frequency.

I do have a daily practice, or sadhana, and it's only 20 minutes long currently, consisting of some chanting, asana (the physical "seat" taken in this material world directed towards union with the Divine), meditation and mudra (an energetic seal made with the hands). It's best when I do it in the morning before the distractions of the day begins or late at night when there's a chance it might not get done at all.

2. Tell us about 2 great projects that you were apart of and what inspired you to work on them.

Two great projects would have to be YIA: Yoga in Advertising and my current project THINX.

YIA was created because there was (and still is) a scarcity of stress-relieving activities in the advertising business. Too much drinking and long work hours are the order of the day and night and YIA provided a healthful refuge to counteract the effects.

THINX was created because there was no product on the market that effectively addressed the monthly needs of women in the developed and developing worlds.  THINX is a patent-pending, beautiful underwear that provides support to women every day of the month, every month of the year. THINX also has a Uganda-based partnership with AFRIpads to provide affordable monthly products to women who need them the most, as many don't have access to the resources necessary. For every pair of THINX sold, one 7-pad re-usable kit gets made available.

3.What early part of your life's journey prompted you to go create such a necessary outlet as a THINX?

Being a woman and dealing with what we all face each and every month is motivation alone. Women are truly amazing!! And to think that some don't have the bare necessities to meet her basic life needs is simply unthinkable.

4. With some of your successful experiences allowing you to connect with other purposeful people, what are some of your day to day activities?

Right now, day to day activities consist of lots of writing and building up the network of people we want to develop relationships with for support of THINX. Gratefully, we have a very strong group of entrepreneurial friends with connections that run deep.

5.  What do you do for fun? What new fun thing would you like to try?

I play my cello, read, hang out with friends, write, teach yoga and snuggle my kitties (trust me, I'm a dog person, don't know how it happened but I'm glad I was open to curing my allergies - cats are mink-soft, meditative and loving cuddlebugs).
As for a thing I'd like to try, it's less about wanting new experiences in life, and more about finding contentment in life and that peace of mind knowing that everything is as incredible as it can be.

6.  One thing on my Life List is...
I'd love to try running a successful international company for 20 plus years, which I'm working on :)

7.  What/Who keeps your grounded in this ever changing world?

My daily sadhana, or spiritual practice. Without the deep roots it provides, the winds of this material world that deliver things like Sandy Hook or Hurricane Sandy can prove too difficult to overcome.

8.  What are 2 qualities that you prefer and respect about a mate at this point in your life?

Ambition and the ability to communicate.

9.  Who gave you 1 really good piece of advice early on and what was it?

A cello teacher when I was a teen who warned that if I didn't practice, I'd be just like Marlon Brando in "On the Waterfront" where he says with such desperation and defeat "I coulda been a contender!" That was a wakeup call.

10. What piece of business advice would you like to share?

If you see a problem in the world that could use some entrepreneurial spirit to solve, go ahead and give it a try! And if it becomes something that you easily find the passion to live for, never give up until your dream of its creation is realized.

11. What is NEXT for you in 2013 and beyond?

Space to dream, create and be greatly useful.

12.  Choose 1: High Heel, Low Heel OR No Heel? Low Heel
Choose 1: Novels, Biographies, Inspirational Book OR Blog ? I don't read enough. Writing too much.
Choose 1: Fresh Fruit, Fruit Smoothie OR Fresh Fruit Juiced? I never eat fruit. I know. Horrible. Need to change this.

13. What ONE word would best describe YOU right now?

Here.

Optional SideNote: In 2 sentence or less, what do you think of the YAAY YOU Blogazine?
I love you for doing this. Many blessings each and every step of the way - one never knows how they uplift and inspire others. Our only job is to keep sharing the light.

ACILEGNA SANTOS (NY)

1.  If there's a song that reflects your vibe, what would that song be?  Do you meditate, pray or/and take time to mentally relax?  If so, what part of the day? For how long?

"They Can't Take That Away From Me" by Mariah Carey. Regardless of my mistakes, regardless of the people who have tried to hold me back or the people who have told me that I can't do something, I will always stand and they can't never take my talents away from me.

Yes, I do mediate usually in the morning before I start my day and before I go to bed. I usually meditate for about 30 mins or so.

2. Tell us about 2 great projects that you were apart of and what inspired you to work on them.

Despite of all the big name projects that I have worked in, I love working with indie artists. Your work and determination show more. For instance I worked with an R&B Group called Project 718. I was inspired by their sound and the fact that they brought that old school R&B feel to the table.

Right now I am working TV Host/Radio personality Jasmine Sanders (TV Host of BET Centric's " Culture Lists" along Tamar Braxton). I love working with her because of her talent, she has an amazing speaking voice, and her determination.

3.What early part of your life's journey prompted you to go create such a necessary outlet as a Brand Management/Event Marketing?

I am actually a fashion and business major with a passion for music, therefore I wanted to find away to work with both or combine the two and with Brand Management I am able to either work on fashion and music clients or be apart of their product development proccess which combines the two. Plus it also gives me an opportunity to be more versitale and work with clients outside of those industry. Plus "there's no product without branding".

4. With some of your successful experiences allowing you to connect with other purposeful people, what are some of your day to day activities?

My day to day usually consist of work, work and more work. Lol. brainstorming and perhaps business dinners and events here and there.

5.  What do you do for fun? What new fun thing would you like to try?

Fun? What Fun? lol

love to travel, I love to cook for fun its my theraphy, I have a very small circle of friends so I like to spend time with them when I get a chance, Relaxing and increasing my knowledge on true history is very fun for me.

I guess one thing that I would love to try is skydiving *side eye

6.  One thing on my Life List is...

My Designer Collection is my last goal in life

7.  What/Who keeps your grounded in this ever changing world?

My mom, my mentor, my conciousness and 1 one particular special individual who I adore to pieces

8.  What are 2 qualities that you prefer and respect about a mate at this point in your life?

Love & Respect

9.  Who gave you 1 really good piece of advice early on and what was it?

I have a few people that have given me great advice but I guess one that I always carry with me "Is ok to be alone, the most successful people were once loners" - Dr. Theda Palmer Saxton

10. What piece of business advice would you like to share?

Keep true to yourself, keep going and believe in yourself.

11. What is NEXT for you in 2013 and beyond?

There's a lot of great things store for me 2013 and beyond, amazing opportunities on the table, new clients and new business ventures outside of the fashion and music industries..

12.   Choose 1: High Heel, Low Heel OR No Heel? Heel
Choose 1: Novels, Biographies, Inspirational Book OR Blog ? Inspirational Books
Choose 1: Fresh Fruit, Fruit Smoothie OR Fresh Fruit Juiced? I'm a sucka for Smoothies
