The Food Of The Month is the Broccoli. With healthy tasty recipes being created around the world, it's awesome to find scrumptious foods of this earth that pure delights with little effort. The broccoli has Vitamin K, zinc and Vitamin A.

Parmesan-Roasted Broccoli

Show: Barefoot Contessa Back to Basics, All Rights Reserved
Episode: Fast And Fabulous


Ingredients
4 to 5 pounds broccoli
4 garlic cloves, peeled and thinly sliced
Good olive oil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
3 tablespoons pine nuts, toasted
1/3 cup freshly grated Parmesan cheese
2 tablespoons julienned fresh basil leaves (about 12 leaves)
Directions
Preheat the oven to 425 degrees F.

Cut the broccoli florets from the thick stalks, leaving an inch or two of stalk attached to the florets, discarding the rest of the stalks. Cut the larger pieces through the base of the head with a small knife, pulling the florets apart. You should have about 8 cups of florets. Place the broccoli florets on a sheet pan large enough to hold them in a single layer. Toss the garlic on the broccoli and drizzle with 5 tablespoons olive oil. Sprinkle with the salt and pepper. Roast for 20 to 25 minutes, until crisp-tender and the tips of some of the florets are browned.

Remove the broccoli from the oven and immediately toss with 1 1/2 tablespoons olive oil, the lemon zest, lemon juice, pine nuts, Parmesan, and basil. Serve hot.

To show a diverse reach of readers that everything is possible all over the globe, what states or countries have you lived in? What state do you live in now?

Brooklyn, New York. Brooklyn girl for life. Bajan (Barbados) and Native American descent.

1.  If there's a song that reflects your vibe, what would that song be?  Do you meditate, pray or/and take time to mentally relax?  If so, what part of the day? For how long?

If I had to choose one vibe it would definitely be one of my favorite songs -Baby, I'm A Star- Prince. It's my theme for this year. It talks about knowing your potential yet still having humility.

Meditation and prayer has become such an important practice in my life. It not only helps me keep mentally and spiritually in check but keeps me physically in a good place. I suffer from different ailments that at times can be taxing in all three departments, so its so important to step away from the madness. The best time for me is late night/very early morning. No matter where I am in the world, that time seems the most peaceful. I meditate for as long as it takes to have a peace of mind, anywhere from 20 mins to an hour or more.



2. Tell us about 2 great projects that you were a part of in your lifetime and what inspired you to go after those goals?

 To be honest, I only have one that's ongoing: Music. It is my lifeline. I was born in to it, my parents are musicians. I live it and breathe it everyday. My inspiration is knowing how good music can make you feel, no matter what the genre. To see the emotion that it evokes, whether it is a listener or the artist themselves. It's amazing and such a natural response. 



3. What early part of your life's journey, prompted you to go create such a necessary outlet?

Growing up as a musician's daughter and being a musician myself, I learned how important it is that we are equally educated about the business of music as we are the art form of music. I grew up watching some of the legends walk through our living room beaming about a recent gig or at a concert elated from the response from the audience.. only to worry later about whether the pay was going to be enough to cover rent or medical expenses. Or to hear them talk about how this one tried to rip them off or whether they should give up their lifeline to get a regular 9-5. It really affected me as a kid. I wanted to do something. I realized even from then that would be my journey. I wanted to learn, educate and protect. That's what kept me pushing to get into the business..that and my overall curiosity.

I was at my job at BMG one day (artist development) and I was talking with an artist. The artist ran down their full day and I asked them how their management felt about some of the issues. She said "I haven't even spoken with my manager about all of this, its just so easy with you. I feel like you're my Sensei". We laughed but it stuck with me. Then a friend of mine (who was SVP of A&R at the time), suggested that I consider management or my own development company. That was the match that lit the fire. 



4. With some of your successful experiences allowing you to connect with other purposeful people, what are some of your day to day activities?

Licensing, A&R and Artist Development. Right now its more on a consultant basis because I really want to focus on my health and my extended family (clients) through Legend Factory. Universal or Warner may become full time soon in a different way: Partnership




5.  What do you do for fun? What new fun thing would you like to try?

I love to dance and laugh. Just spend time with good people. As far as a new fun thing, I don't know. There's so many, I'm trying new things all the time but most of them to face some fears or get a rush.



6.  One thing on my Life List  is ... learn more languages, I hope to know at least 5 fluently. 



7.  What/Who keeps you grounded in this ever changing world?

My family. Both traditional and extended. There's so many interesting people/beings in the world. Each one motivates me in a different way.  



8.  What are 2 qualities that you prefer and respect about a mate at this point in your life?

Honesty and Loyalty. My husband Glenn is my soul mate and best friend.



9.  Who gave you 1 really good piece of advice early on and what was it?

Dr. Lefferts Brown (R.I.P) he inspired me in so many ways and was such a selfless person. He said "Mandana (his nickname for me), you have so much potential. I don't want you to waste it on one field or one purpose. Learn all you can and don't let them tell you no." I still get choked up thinking about it. 



10. What piece of business advice would you like to share?

There are two sayings that I have had for years:
"Never Settle"-   We doubt ourselves too often. Are we good enough, strong enough, smart enough to accomplish our goals? Are we capable of being loved or trusted? It's ok to negotiate but do not settle for less because you think you deserve or are worth less.

"Speak it then you live it"- People often denounce the power of words but often your words can become your reality.  That's why I say speak and act with integrity. 

The second meaning of this mantra is much like the saying "Don't just talk about it, be about it".  You must put wholehearted action behind your words in order to accomplish your goal.

1.  If there's a song that reflects your vibe, what would that song be?  

Just Do You by India Arie 


 Do you meditate, pray or/and take time to mentally relax?  If so, what part of the day? For how long?

Yes, I meditate when I wake up for at least 5 minutes.  Journaling, drawing and/or singing (anything from mantra meditation to pop songs) also helps me to mentally relax.  




2. Tell us about 2 great projects that you were apart of in your lifetime and what inspired you to go after those goals?

Both projects were inspired by a deep desire to be true to myself.  In both scenarios, I was not feeling fulfilled and I felt an inner pulling to make a change and take a chance.  Both involved me taking major risks and stepping out of my comfort zone.  

In 2008 I resigned from my television assistant job (after 4 years) and took myself on an exploratory vacation to Italy.   I'm actually Jewish, but I grew up in a very Italian American suburb and so I started studying Italian when I was 12 years old.  I fell in love with the language, the culture, people and food.  I participated in family home stay exchange in high school and I studied abroad in Italy in 2003.  I was curious to see if it felt right for me to "move to" Italy and so decided to leave my New York job, apartment and family so that I could explore this possibility.  I job interviewed, attending language schools, cooking classes, networked, traveled, ate, cried, photographed and learned lots about myself.  After 3 months, I moved back to New York and decided that I can always vacation in Italy. 

In 2013 I resigned from my digital media Human Resources job (after 3 years).  I decided that I didn't want to be a "human resources professional" anymore and that I'd rather be a "Professional Human Resource."  I wanted to literally be a "human resource" who helps people and shares the wide variety of resources which I have amassed. (Much like how I am sharing of the hyperlinks with you here!)  I realized that sitting at a desk in a primarily administrative role was not fulfilling for me.  I longed for opportunities that would utilize my strengths and allow me to exercise my creativity.  Once again, I left my safe NYC apartment and salaried position to explore possibilities that felt more true for me.  I moved back to the suburbs with my family and spent months doing self-reflection work, attending developmental workshops, writing, creating, learning and exploring.  I was determined to create a more meaningful path for myself.  Here are some of the highlights from my months of experimentation:  I connected with a community organization called The East Side Institute ( http://eastsideinstitute.org/about/ ) where I participated in workshops in story telling, musical remixes and comfort zone expansion.  I took free classes with The All Stars Project(http://allstars.org/who-we-are) on public speaking and poetry.  I experienced the awesome Wille Mae Rock Camp for Girls community.  (http://williemaerockcamp.org/ ) I enrolled as a camper at Ladies Rock Camp where I formed a band with 3 other women and we learned instruments and performed an original song in 3 days!  (https://www.youtube.com/watch?v=YxBnGWz1t4w ) I had so much fun there that I became a counselor for the kids' rock camp and happily joined the counselor band where I was able to perform with my (childhood instrument) flute at the Music Hall in Williamsburg! ( https://www.youtube.com/watch?v=qSNYdGkW8Wk ) I also stumbled upon an awesome Swiss based company called Brainstore, which is a modern day think tank for fresh ideas for the everyday human.  I attended training sessions and was inspired to explore the potential of licensing my own entrepreneurial Brainstore!  As a Brainstore licensee, I'm currently developing a concept called "Purpose Parties."  I can help host fun brainstorming events for people who feel stuck and know they want more out of life, but they are not sure where to start.  The Purpose Party concept will help me guide these purpose seeking people in a customized (group) brainstorming session with the intention for us to come up with new ideas and possibilities for this person to experiment with and explore! http://www.brainstore.com/stores/stefs




3. With some of your successful experiences allowing you to connect with other purposeful people, what are some of your daily activities ?

I started working at a local yoga studio so that I could connect with other mindful people and so that I could take classes and strengthen my body and calm my mind.  

I experimented by creating my own meetup group (http://www.meetup.com/Reinbobytes-Connection-Crew/) with the intention of connecting those on a spiritual path for friendship, community and resources.  I hosted a vision boarding meetup, a Desire Map Book Club, lunches, and art workshops.   

I am also a member of a local study group for A Course In Miracles. ( https://acim.org/ )

I also enjoy learning, networking and attending events at local holistic healing centers on topics ranging from astrology to dream journaling.  

Recently, I discovered a meetup in New York City called Living Quirky http://www.meetup.com/Living-Quirky-in-NYC/ which is a group that inspires group members to honor and embrace what makes each of them different and encourages them to express ALL parts of themselves-- even the hidden ones.  I love how the organizer, Christina, creates a safe place for Quirkster members to share about themselves and to inspire each other to be even more fully who they are.  There have been meet ups in Central Park, Tiki Bar happy hours, and welcoming dinner outings to S'MAC, a mac and cheese restaurant in NYC.  




4.  What do you do for fun? What new fun thing would you like to try?

For fun I enjoy attending lectures and workshops about art, spirituality, creativity, etc.
I also like to create my own art.  Currently I enjoy expressing myself via playful rhyming poetry, vision boards (cutting up magazines and making a collage about what I desire to bring into my life), and I also really enjoy changing the lyrics to popular songs and creating comedic and quirky musical remixes.  (i.e. parody songs with a spiritual or uplifting message such as "I Live for the AHAs" which was inspired by Lady Gaga’s Applause: https://www.youtube.com/watch?v=Mj4SZNJYjTA)

Also, over the past year I started attending karaoke nights and allowing myself to participate.  I accepted that I have a desire to perform and entertain people and so I'm grateful that I allowed myself to feel my fear and sing karaoke anyway!  It's such a great emotional release! 

I really like trying new things and connecting with diverse, mindful and open people.  Last week I went to my first Ecstatic Dance http://ecstaticdance.org/nyc/ gathering in New York City.   Their motto is: "No Booze.  No Shoes.  No Chit Chat."  It's basically a room of people who dance to DJ music mindfully.  I heard that it's very similar to 5 Rhythms and so I'd like to try a 5 Rhythms class in the near future.  http://www.5rhythms.com/who-we-are/

I'd also like to try various forms of creative and meaningful exercises such as:

IntenSati  http://www.satilife.com/workouts/intensati/ a unique workout method which combines empowering affirmations with interval training, martial arts, dance and yoga leaving participants feeling stronger, uplifted and inspired.  


Qoya a "workout” that invites women to fully express themselves through their bodies which includes strength, flexibility, balance, endurance, and agility training.  


305 Fitness http://305fitness.com/  a NYC based dance cardio workout which infuses dance moves, sports drills and high intensity interval training to create a full-body, fun workout.  Each class features a live DJ and the classes feel like a night out partying disguised as a workout.




5.  One thing on my Life List is…

I'd love to help create and connect a community of people who love to sing Disney songs, Broadway show tunes, pop songs, etc.  I want people from all different singing backgrounds and experience levels to be able to come together to sing, let go and enjoy themselves.  I want people who had the lead role in their high school musicals to be able to sing together with those who were repeatedly placed in their high school musical's chorus or ensemble roles.  I also want people who were unable to get themselves to audition at all to be able to join and feel comfortable singing with this open and welcoming group.  I want everyone who enjoys singing to be able to have a place to sing without judgment, expectations or requirements.  I'm still fleshing this out, but I dream of this concept of a playful, singing circle, community meetup often.  I see it as a safe environment where people could join to meet new people who want to let go, act silly and get in touch with their inner child while singing show tunes and Disney songs! 




6.  What/Who keeps you motivated in this ever changing world?

I'm motivated by inspirational teachers and musicians.  Louise Hay, author of the book You Can Heal Your Life, inspires me to make positive changes in my life.  Musicians like Katy Perry, Lady Gaga and Amanda Palmer motivate me to stay true to myself, to experiment with unleashing my own brand of creativity and to go with the flow on my constantly evolving path.  The 2013 X-Factor (2nd place) winner, Carly Rose Sonenclar, also motivates me because she attends my former high school and has shown me that anything is truly possible if you work hard and are passionate about it.




7.  What are 2 qualities that you prefer and respect about a mate at this point in your life?

I prefer a mate who is authentic (i.e. communicates and shares openly).  I also prefer a playful sense of humor so that we can laugh a lot together.  Willingness to go with the flow is an added bonus! 




8.  Who gave you 1 really good piece of advice early on and what was it?

My fifth grade teacher, Mrs. Pezzola, had a poster hanging in our classroom saying: "Every person has a gift.  It's just that some open their gifts before others."  This resonated deeply with me as a 10 year old and it still does today.  It reminds me that we are each on our own journey and that there is no need to compare our path to the path of others.  I trust that things are happening for me (not to me!) and that I am always exactly where I need to be.  (Which reminds me of another favorite song of mine by Amy Steinberg! 9. What piece of business advice would you like to share?

Awareness is powerful.
Trust your gut.  
Accept that what you create in the beginning is not going to be perfect.  
Just start.

10. What is NEXT for you in 2014 and beyond?
